A Garden Born from Passion

Where It Began

The Vision Behind the Vines

PIÑA Kitchen & Coffee was born from a collaboration between two individuals who believed that great food deserves an equally great setting. Designer Andreas Lundin brought his eye for tropical aesthetics and architectural beauty, while restaurateur April Santos brought the management expertise and passion for Philippine culinary heritage. Together, they created something neither could have achieved alone.

Opening in December 2023 as a sister restaurant to an existing local favourite, PIÑA was conceived as a destination — not just a place to eat, but an experience that begins the moment you turn off the highway and wind up into the hills of Sapang Bato. The name itself, "Piña," is the Filipino word for pineapple — a fruit deeply embedded in Philippine culture and the central motif of the restaurant's identity.

The founders chose Sapang Bato deliberately: a barangay known for its natural forests and the indigenous Aeta communities who have tended these hills for generations. Building relationships with local Aeta farmers for fresh produce was not an afterthought — it was foundational to the concept, giving PIÑA a farm-to-table story rooted in respect and reciprocity.

We believe that the best restaurant design is not built — it grows. Every hanging lantern, every potted fern, every thatched detail at PIÑA is chosen to work with the surrounding forest, not against it. When you sit under our trees, you are in the design, not just looking at it.

Cuisine That Tells a Story

Filipino food is one of the most layered, complex, and underappreciated culinary traditions in the world. Our menu honours this heritage while asking what happens when you add a pineapple twist, a Korean accent, or a European technique. Not fusion for its own sake — fusion with a point of view.

Community at the Root

The Aeta people of Sapang Bato are not a footnote to our story — they are a chapter. Sourcing from their farms is a commitment we make with each season and each dish. It keeps the supply chain short, the produce honest, and the relationship real. Good food starts with who grew it.

Dec 2023

PIÑA Opens Its Doors

Andreas Lundin and April Santos inaugurate PIÑA Kitchen & Coffee as a sister restaurant to an established local favourite. The opening night draws a crowd of curious diners drawn by word-of-mouth and the striking terracotta facade visible from the road.

Early 2024

Farm Partnership with the Aeta Community

PIÑA formalises its partnership with local Aeta farmers in Sapang Bato, sourcing fresh vegetables, herbs, and tropical fruits directly from indigenous growers — anchoring the menu in genuine farm-to-table practice.

Mid 2024

Featured in The Voice Newsweekly

PIÑA earns its first press feature, with The Voice Newsweekly describing it as "a new gastronomic paradise" blending natural allure and Asian flavors. The feature drives a surge of new visitors from beyond Pampanga.

2024–2025

Menu Expands & the Bar Programme Grows

The kitchen team launches the updated menu — adding the Wagyu Burger, Marry Me Chicken, and new cocktail and mocktail creations — while the bar earns a following for its craft sangrias, tropical cocktails, and signature Piña Iced Tea.
